In the summer of 2015, I was attending a swim party with some friends. I decided to try out a new type of baking for the third time…sugar cookies decorated with royal icing.
Royal icing is an icing for sugar cookies that dries hard. Using a thinned out royal frosting is called flooding. It’s a long and meticulous process, but the cookies turn out amazingly. They take forever, and sell for $25 a dozen on Etsy. That seems crazy, but they are super delicious.
I used a big biscuit cutter for the floating tube cookies, and cut out the middle with a smaller biscuit cutter. For the flip flop cookies, i just traced the desired shape onto parchment paper, cut it out, and then used it as a template to guide me as i cut out cookie dough with a paring knife.
